The Wild Game Harvest Experience is more than a workshop — it’s a hands-on journey into food sovereignty, ancestral skills, and the deep satisfaction of providing for yourself and your family.
Held on private bushland on the South Coast of NSW, this immersive long weekend invites you to camp under the stars, share nourishing meals, and learn skills that root you more deeply in the land and your own resourcefulness.
This is a return to instinct, memory, and traditional ways — reimagined for our modern world.
This experience is for those who feel the call to:
- Learn the foundations and basics of ethical sustainable hunting and butchery
- Understand how to process and butcher large game animals
- Nourish themselves and their families in ways that respect the land and the animal
- Step toward greater food sovereignty and self-reliance
What you’ll learn and experience:
- Mock hunt — step into the hunter’s mindset and practice awareness and approach. The nature of each deer harvest is always different, , influenced by countless variables. Discover what it means to move silently, sense the landscape and sharpen intuition. This practice mirrors the respectful approach of ethical hunting, where patience and attunement guide every step.
- Hands-on butchery: learn to process and break down a deer and use every part, knife skills
- Whole-animal respect: discover how hide, sinew, bone, and fat can all be used beyond the plate
- Cooking and feasting: learn to prepare different cuts, cooking techniques, jerky making, consuming offal, rendering fat and enjoying meals together in community
- Stone knapping: learn foundations of crafting razor-sharp stone blades and glimpse the tools of our ancestors
- Tanning and primitive skills: explore how hide becomes usable material

Andrew
Harvesting has always been an integral part in Andrew’s life. From the age of 2 he was witnessing and assisting his family harvesting animals on their small-scale farm just outside of Sydney. With guidance from his family, he was able to learn many skills in traditional preparation of foods including gardening, pickling, dry ageing, and many other types of traditional cooking. His exposure to this lifestyle from such a young age has helped cultivate his passion for sustainable living.

Sam
A life of spending quality time alone in wild places, paired with an obsession for all things prehistoric, has made Sam a wellspring of ancient knowledge. His passion spans stone knapping, atlatl and bow making, and the art of transforming bone, sinew, hide, and antler into tools and weapons — echoing the resourcefulness of our ancestors. What sets Sam apart is his boundless enthusiasm for sharing these forgotten skills, bringing them alive in the modern world and inspiring others to experience the land as humans once did.

Lan
Passionate about food and nose-to-tail eating, with a journey that began with interest in food provenance and grew into wild game harvesting — where respect for the whole animal and the land come together. She is inspired to empower others to see that nourishing ourselves and our families with ethical and sustainable food should be accessible to everyone.

Arrive: From 2pm Friday 27th February 2026
Departure: 12pm Monday 2nd March 2025
Location: Private property , South Coast, NSW. Address will be disclosed in email once booking is confirmed. 265km/4.5hrs from Sydney CBD, 220km/3.5 hrs from Canberra, 40km/1hr from Ulladulla. 2WD Access
Group size: Maximum 25 Participants (Max 10 kids)
Accommodation: BYO camping setup (off-grid, under the stars). Limited cabin options for groups or families with children. Please get in touch for more info on cabin options.
Amenities: An immersive off-grid camp experience - there will be drop toilets, there are no shower facilities. There is a creek running through the property to cool off and enjoy.
Meals: Lunch and dinner are fully catered for using wild game, wholesome seasonal produce, seed oil free cooking.
(Friday: Dinner, Saturday: Lunch & Dinner, Sunday: Lunch & Dinner)
BYO camping set up and breakfasts. All catering will be wild sourced game meat, seed oil free and locally sourced produce.

Waiver and assumption of risk
The Wild Game Harvest Experience is a hands-on, outdoor learning environment that may involve uneven terrain, fire, sharp tools, animal processing, and changing weather conditions. Participation involves inherent risks that cannot be entirely eliminated.
All participants are required to complete and sign a liability waiver and assumption of risk acknowledgement prior to attending. For participants under 18 years of age, a parent or legal guardian must complete the waiver on their behalf.
A link to the waiver will be provided via email after checkout.
Participation is not permitted without a completed waiver.
By purchasing a ticket, you acknowledge that you have read and understood these participation requirements\db and agree to take responsibility for your own safety and conduct during the experience.
Refund & Cancellation:
The Wild Game Harvest experience requires significant investment in the procurement and preparation of animals, as well as production and location costs that cannot be recovered if a place is cancelled.
Exchanges: While refunds cannot be offered, your payment may be transferred as credit toward a future event if at least 2 weeks’ notice is provided.
