- Kangaroo steaks
Step 1- Melt some butter in a non stick fry pan and add it to a bowl, then add a tablespoon and a half of the Mediterranean spice mix and mix it though. You may need to add more or less depending on the amount of steaks your cooking and your palate.
Step 2- Place the steaks in the bowl of butter and spice and massage the marinade into the steaks. Place the steaks in the fridge.
Step 3- Th next day, 1 hour to 30 min before you cook the steaks pull them out of the fridge so they can come back to room temperature. Don't freak out if the butter hardens, it'll melt once it get cooked in the pan.
Step 4- Heat your cast iron skillet, or gas BBQ prefer cooking it in the skillet! Throw the steak on once its nice and hot, please don't over cook them though, once the other side releases some blood flip it. And do the same for the other side. Then place it on a serving board or serving tray and wrap it in foil and let it rest for 8 minutes.
Step 5- When serving cut against the grain, and i generally garnish it with some lemon and it may need a little bit of salt! What that's totally up to you.
